Mexican quesadilla is a delicious and very nutritious snack. This very popular Mexican dish consists mainly of heated tortillas, chicken, pulled cheese and vegetable toppings. There are plenty of recipes for quesadilla. We can also make our homemade quesadilla from our favorite ingredients. How to make quesadillas?
What is quesadilla?
“Queso” means cheese in Spanish. It is not surprising then that toasted tortillas filled with melted cheese are called “quesadilla”. In addition to cheese, everything can be found in quesadilli. Mushrooms, olives, tomatoes, what anyone likes.
Traditionally, Oaxaca type cheese is used for qesadilli, but it is also sometimes replaced by other types of cheese. Often, various optional ingredients are added to quesadilli – potatoes, mushrooms, cuitlacoche, sliced jalapeño peppers, chorizo sausages, etc. Wheat tortillas are used in northern Mexico.
Quesadilla with chicken and cheese
Ingredients:
- 4 tortilla wraps,
- 200 g chicken,
- 1 red pepper,
- 1 onion,
- 3 mushrooms,
- 3 tablespoons of canned corn,
- 50 g of grated cheese,
- Hot pepper, cumin, oregano,
- A handful of fresh herbs),
- frying oil.
Preparation:
Cut the chicken into small cubes, mix with spices, fry and set aside. On a tablespoon of oil, gently fry the chopped onion, add peppers and mushrooms, fry until the juice evaporates. Put 1/3 chicken and vegetables on the first cake, sprinkle with 1/3 cheese. Repeat the process – 3 layers of stuffing should be made between 4 pies. Bake it in the oven at 180 degrees for about 8 minutes (until the cheese is melted).
Vegan quesadilla
- 8 wheat tortilla wraps
- 1 can of black beans (approx. 300 g)
- 1 can of corn (approx. 300 g)
- 1 pepper
- 2 tomatoes
- chili
- thyme
- dried or fresh coriander
- salt
- pepper
Preparation
Cut the tomato and pepper into small cubes. Fry in a pan, add spices. When the vegetable juice evaporates, add beans and corn. Fry for a moment. Then, put stuffing on each tortilla cake. Arrange it like this so that it occupies only half the cake. Then close the tortilla (bend it in half) and heat it in a pan or in a toaster, serve hot!
Quesadilla sauces – tomato sauce
Cut the tomato into smaller pieces. It blends easier and faster. Do the same with onions and garlic. Put everything in a blender. Finally, add the adobo marinade from chipotle peppers. The braver can add the whole chipotle pepper, but you have to take into account that the dish will be quite spicy. Such peppers can be obtained in most hypermarkets. Blend everything to obtain a uniform consistency.
Quesadilla sauces – Chipotle Sauce
To prepare it you will need:
- approx. 150 ml mayonnaise
- 1 tbsp water
- 2 teaspoons of freshly squeezed lime juice
- 1/2 teaspoon of adobo marinade from chipotle peppers.
- 1/2 tsp sweet smoked paprika
- a pinch of salt and pepper
Preparation:
Place all ingredients in a small bowl and mix thoroughly with a spoon. But be careful with the amount of chipotle. Add it gradually, trying from time to time – you can always add more if needed.
